While trying to maintain a healthy diet can be hard, battling cravings can pose an even stronger challenge. I personally love pasta dishes so have had to find a way to recreate some of my favorites. Here’s a great recipe to satisfy that rich pasta craving for an old Greek favorite.
This recipe will serve one, but feel free to increase the serving size to feed a family.
Ingredients:
1. 1 Zucchini or Yellow Squash
2. 1 Tablespoon butter (preferably grass fed butter like Kerrygold)
3. 5 Jumbo shrimp
4. 1/2 Tablespoon Mizithra Cheese (or to your liking)
Steps:.
Prepare the Zucchini by turning it into “noodles” with a Veggetti Spiral Vegetable Slicer. Boil the “noodles” until soft, drain thoroughly.
Peel and cook shrimp over medium heat until done.
Brown butter in a saucepan by cooking over medium heat, stirring frequently until butter is lightly browned, skimming foam as necessary.
Pour butter over “noodles,” top with shrimp, sprinkle with Mizithra cheese.
